Acquiring Armadillo Scutes:
Armadillos reside in warm biomes, spawning in groups of two or three. They defensively curl into a ball if approached rapidly; approach cautiously to avoid this. These biomes include: Badlands, Eroded Badlands, Savanna, Savanna Plateau, Windswept Savanna, and Wooded Badlands.
There are two primary methods for collecting scutes:

Passive Collection: Similar to collecting chicken eggs, an Armadillo sheds a scute every 5-10 minutes. This requires patience but no tools.

Brushing: This popular method uses a crafted Brush. The Brush, typically used on sand or gravel, gently removes one scute per use.
Using a Brush:
A Brush (crafted with a Feather, Copper Ingot, and Stick) can be used four times (Java Edition) or five times (Bedrock Edition) before breaking. Damaged Brushes can be repaired using an Anvil, preserving enchantments if present. Possible enchantments include Unbreaking, Mending, and Curse of Vanishing.
To collect scutes, slowly approach the Armadillo and use the brush. Multiple Brushes yield many scutes for crafting Wolf Armor (six scutes are needed per suit).
Once you've gathered the necessary scutes, craft the Wolf Armor at a Crafting Table. These methods currently represent the only ways to obtain Armadillo Scutes in Minecraft.
